Soil: glacial and alluvial sediment, silt, with North/West and South/East exposure. Altitude: 350 meters above sea level.
First vintage: 2015.
Annual production: 4,000 bottles.
Harvest: manual, in late October / early November.
Vinification: destemming of chilled grapes, 10-day whole-berry fermentation at a controlled temperature (23°C), with daily punch-downs.
Aging: 12 months in 25-hL French oak barrels, followed by 1 year of bottle aging.
Tasting notes: ruby to cherry-red in color. The nose is fruity (blackberry, cherry), with notes of violet and balsamic nuances. On the palate, it is elegant, savory, fresh, soft, and slightly spicy, with a persistent finish.
Recommended pairings: mixed boiled meats, veal kidney, ravioli with roast meat sauce.
Curiosity: Although typically associated with Piedmont, Nebbiolo has long been present in the Aosta Valley, where it is traditionally grown under the local name Picotendro, particularly in the glacial alluvial valley floor areas of Arnad and Issogne.
Les Crêtes is committed to vinifying this historic variety to highlight its unique mountain identity. This gave rise to Nebbiolo “Sommet”—Sommet meaning “summit” in French—in honor of the mountains that surround its vineyards.
