Dark and deep in color. The nose is broad and complex, with fruity notes of wild blackberry and plum. Balsamic hints of licorice and menthol blend with memories of dark spices (black pepper and clove), tobacco, leather, and coffee. A wine of great structure—powerful and austere—with well-integrated, elegant tannins.
Vinification and Aging:
Fermentation in stainless steel at controlled temperature. Aged in large oak casks (50 HL) for 36 months, followed by further bottle aging.
Food Pairings:
Aged cheeses, grilled meats, stews and braised dishes, fine game.
