Fumin 100% (native variety).

Production area: La Tour and Les Crêtes in Aymavilles. Vines approximately 30 years old.

Soil: morainic, loose, sandy, on slopes with north/west and south exposures. Altitude: 650 meters above sea level.

First vintage: 1994.

Annual production: 12,000 bottles.

Harvest: manual, at the end of October.

Vinification: destemming of the grapes, 12-day fermentation in stainless steel at a controlled temperature (24°C), with daily pump-overs.

Aging: 12 months in 300 L French oak barrels, followed by 6 months of bottle aging.

Vinified as a single-varietal for the first time by Les Crêtes in 1993, Fumin has proven to be a wine of great elegance, suitable for long bottle aging.

Tasting notes: deep ruby red with violet highlights. On the nose, fruity with hints of leather and spices. Full of character, the palate is juicy and vibrant, with soft tannins and notes of vanilla, juniper, and tobacco. Long finish, with licorice on the close.

Recommended pairings: carbonada with polenta, venison mocetta, and braised game.

Curiosity: the name “Fumin” comes from the smoky-gray color of its grapes, rich in bloom (pruina). Traditionally used in blends for its deep color, it was nearly lost in the 1970s but was saved by local vignerons and became part of the Valle d’Aosta DOC.
