Oncia Rossa is a wine made just as it used to be, a wine born from 100% Cesanese di Affile grapes grown on stony, mineral-rich soils. Harvested by hand with meticulous care and attention, the bunches are vinified in a completely natural way, so as not to compromise all the good work done in the vineyard.
For this reason, fermentation is spontaneous and maceration on the skins lasts for at least 8 days, allowing the Cesanese berries to release all their qualities.
The wine then matures in stainless steel for 10 months and subsequently rests in bottle for at least another 3 months. Throughout the entire winemaking process, no oenological additives are used, and the wine undergoes neither fining nor filtration.
