A great wine is born from a gifted terroir and a clearly defined production philosophy. A solid foundation of certainties, many small agronomic attentions, and the humility to strive for improvement every day by following the teachings of nature.
The vines are carefully tended and fertilized with manure from selected farms: an important practice that nourishes the plants naturally and improves soil structure. All vineyard work is carried out regularly, using mechanical equipment that allows the soil and roots to breathe, without chemical herbicides. The most delicate operations are performed by hand: from pruning to leaf removal, as well as thinning and, of course, the harvest, when the selected grapes are picked and collected in small crates.
Pomontino is born from careful whole-berry vinification with spontaneous fermentation of grapes from vineyards approximately 15 years old. It then ages for about one year in large Slavonian oak casks, followed by a further 6 months in bottle. Unfiltered.
In the glass, it shows a magnificent ruby red color. On the nose, it reveals notes of pomegranate, red currant, sour cherry, and bitter orange.
On the palate, it is agile, savory, and juicy, marked by vibrant acidity and supported by a fine tannic texture. It finishes with citrus notes and good persistence.
