Vinification techniques:
Sangiovese grapes from different clones are vinified separately. Spontaneous fermentation and maceration take place in temperature-controlled stainless steel tanks. The wine remains in contact with the skins for an average of 18 days, followed by malolactic fermentation. No fining or filtration is carried out.
Aging:
70% in stainless steel and 30% in cement tanks for 8 months, plus a minimum of 4 months in bottle.
