COS Winery follows the principles of biodynamic agriculture, a farming method inspired by the philosophy of Rudolf Steiner, which incorporates the ideas of organic farming and, with a holistic approach, invites us to view the soil and the life it sustains as one interconnected system. Biodynamic farming means respect—it means not asking more of nature than it can naturally give.
For this reason, at COS we have developed projects such as phytodepuration of wastewater from the cellar and composting of pruning residues, using a composting method that avoids any chemical substances or artificial additives. For us, biodynamics is not a trend, but a form of wisdom born of respect, passion for work, and love for life.
COS’s Sicilia Frappato IGT is aged in glazed concrete tanks, and after one year, the result is a wine of remarkable fragrance and balance.
It is characterized by a beautiful, brilliant ruby red color. The nose opens with elegant and refined aromas: notes of red fruit, floral hints of rose, and a touch of almond. On the palate, it is medium-bodied, with perfectly balanced tannins.
