The guiding principle of Cantina di Oltretorrente is that wine should reflect the territory as faithfully as possible. The complexity derived from old vines—and especially from the many varieties they contain—is not streamlined into simpler expressions. Aging always takes place on the lees, to naturally enhance the wines’ complexity and stability. The natural acidity present in the main grape varieties they work with is not masked; malolactic fermentations in the whites are neither blocked nor encouraged. Minerality and freshness are carefully preserved by working only with whole, unstemmed white grapes. They appreciate the character that concrete vats impart to their wines. Fermentations are almost always spontaneous, and the only addition is sulfur dioxide, used in modest and considered amounts.
A rich white wine, with savory and mineral nuances, made exclusively from Timorasso grapes grown in 20-year-old north-facing vineyards on calcareous-loamy soils. This Timorasso is aged for 10 months in concrete vats, then refined in the bottle for four months, resulting in a satisfying sip supported by vibrant acidity that promises persistence. Straw yellow with golden highlights; the nose reveals white flowers and fruit, followed by citrus and aromatic herbs, with a clear sense of minerality. On the palate, it is fresh yet savory, with good structure.
