The cuvée “Equilibre” by Sadi Malot is composed of grapes from vineyards in two villages: 50% Chardonnay from Villers-Marmery, classified as Premier Cru, and 50% Pinot Noir from Verzy, classified as Grand Cru. The blend also includes the use of approximately 35% reserve wines, aged in steel and following the solera method initiated in 1982: each year, about one-third of the blend is renewed with wines from that vintage. It has a light gold color with a lively and persistent effervescence. The clear and distinct aromas evoke nuances of white fruit, golden apple, and pear, along with sweet floral notes. Hints of crust and white bread are present. The taste is smooth with buttery sensations and exceptional freshness.
