Recommended wines for Christmas Eve dinner:
On Christmas Eve, fish is traditionally eaten, so we have chosen:
A Franciacorta Rosé to start: perfect for seafood appetizers, shellfish, and fried dishes.
For the first courses, such as risottos and pasta with seafood, we look for the minerality of a Vermentino di Gallura DOCG, a structured and mineral wine.
For the main courses, grilled or stewed fish or shellfish, we recommend a Ribolla Gialla DOC from Collio, with structure and character.
We finish with a selected Riesling, with fruity notes but, most importantly, well-structured acidity and excellent persistence. Perfect for any type of fish.
